Guard Dogs how young is too young or old

We are thinking of adopting a GP or Anatolian(sp). But I am not big into getting a puppy. Has anyone adopted or have any of you gotten an older dog I found a couple who had been raised with livestock(goats etc) and kids and cats and everything else you could own. But one is in TX and the other is in New jersey (better for me). Any opinions on this?
