SOUPER SALAD
- GREEN SALAD WITH GOAT CHEESE & A GARLIC-LEMON DRESSING

Ingredients:

3 Tablespoons of Olive Oil

1 Tablespoon of Lemon Juice

1 Tablespoon Italian Parsely (minced)

2 Cloves of Garlic (finely chopped)

1 Teapspoon of Honey Mustard

Salt and Fresh Ground Pepper (to taste)

4 Cups of torn leaf lettuce (or your favorite mix...even pre-mixed)

1/4 Cup of Dried Cranberries

2 Ounces of Goat Cheese (sliced or Crumbled)
You can add up to 3/4 pound of Pre-Cooked ground, diced, or even Chivo Chorizo to add a bit of protein in the form of meat..if you like.
Directions:
In a large salad bowl, whick together oil, lemon juice, parsley, garlic and mustard.
Add the salt and pepper.
Add the lettuce and cranberries.
Toss well. Divide among 6 salad plates.
**if using the meat** Place on Top.
and then sprinke the Goat cheese on top.
Makes 6 servings.
Makes 10-12 Brushchetta.
