There are no other early signs.

Bloat can happen very quickly with very little or no warning. It is a fact of life with ruminants. The best you can hope to do is carefully control any diet changes, feed plenty of good quality roughage, limit grain to only what is necessary to supplement the nutrition recieved from the hay. Some feeds are said to contribute to bloat, very green grass, rich alfalfa hay, corn, feed with alot of molasses. It is possible she also ate something that blocked her esophagus so that she could not burp, this would kill in a very short time, with no warning at all.

With goats sometimes "stuff" happens.

She may have gotten rolled over on her back and not been able to get back up. This will cause bloat that you can't do anything about. Most goats with bloat will not eat or will eat very little and will look very big in the belly. Dead goats will also swell up really fast, in only 15 to 20 minutes. The rumen microbes take a good long while to die and even then they keep producing gas.

I have found the best treatment for bloat is to give 1/4 to 1/2 cup vegetable oil, stand or hold the goat such that the front end is higher than the back end, deeply massage the left flank area (where the rumen is) to help break up the bubbles that trap the gas and the goat will burp it up. Do this until the goat "deflates" and check every 30 minutes or so to be sure the bloat doesn't return. A dose of baking soda and water will help relieve any acidosis from the bloat and get the rumen back to normal. After treating for bloat don't feed any grain, just good quality hay, for a day or so then start them back on grain slowly.
