Sherry is the expert here on this but here is what I've been doing..... Sterilze lids and jars,put room temperature milk in hot jars and top with hot lids. Bath can for 1 hour at a gently rolling boil. Now Sherry tells to reduce that time if you can and you will have better tasting milk I have successfully canned batches so far at 30-45 minutes but I do it for close to an hour just to be sure. It is supposed to keep for a year.
