Either I'm good (which is highly unlikely) or lucky (and this would be the only case of it) but so far my soft cheese has been very sweet and creamy. I made my first attempt at cheddar the other day and it was hard and round and smelled like cheddar when I waxed it. Two months from now I'll let you know. In the meantime I'm going to keep on making it. If it's good, then pat me on the back. If it isn't, I'm going to get a keg of beer and invite all my friends over to sit on the top of the hill and lob 2lb wax covered projectiles into oncoming traffic. Write you again when I get out of jail!
