What I have done to save one or two shade trees is wrap the trunk (and low branches) with hardware cloth (tiny square wire fence -the name can be decieving if you're not sure what I'm talking about), about 1/4" squares.
Chicken wire gets destroyed by the goats, and they can somehow get their little muzzles between the wire, and they climb on it dragging it down.
I usually get a 25' roll of the hardware cloth from a local home depot, wrap it around the tree trunk to a height that they can't reach, and make sure all the low branches get wrapped too. Then I make sure the wire is taut around the trunk so it won't slip and then tie it up with strong wire (to avoid stapling the tree). Electric fencing wire works good as your tie. This "fence" keeps the little buggars, and big buggars from peeling the bark off. If you have exposed roots, those can get chewed, so just bury them a bit. Soon the goats will realize that any species of "silver" tree just isn't worth eating. (but it makes a great scratching post!)
But.. if you have a big tree, or lots of branches - like Vicki said - you're better off getting a few cattle pannels and boxing it off from the pasture.
