Couple of things to add to patti's post. I use dog kennel fencing -the portable panel type they sell at Menards or Tractor Supply. I feed All Stock from Orscheln's as my regular ration. It's a sweet smelling grain mix,12%protein. I add a bit more protein for my milkers. You could do well with chicken wire if you run an electric line as well to keep them off the fence. Don't use barbed wire as it can cause nasty injuries. I believe it is possible to castrate an adult buck. He would have everything except his testicles. Usually they just remove them from the scrotum and allow the sack to dry up.
The chances of your Nanny having a normal delivery are excellent. 99% percent are normal,in fact my girl typically wait until I give up and go into the house and I come out the next morning to clean ,dry kids!Just be sure she is as healthy as she can be going in (and not too fat!)
My Collies run with my goats. They are very respectful of them and very protective. When the girls are out to pasture I put the dogs with them. I also have my older girls trained to roam freely, with supervision. They will come in when called.Just be sure to supervise so they don't wander too far.
Goats are very easy animals.Use a good dose of common sense and find a good large animal vet and you will be fine.
