I think the one that can answer your question about the "third teat" is Vickie. She raises Nubians and can tell you all the particulars.
Now don't quote me on this, but this is what I know or have heard. Some breeders like the third teat because it may mean more milk. I think it may have something to do with the genetics, registry, whatever. But it is a trait that some would find desireable while others would find it a detriment. Hard to say. Guess it depends who you talk to about it.
My suggestions for learning would be to check out sites like http://www.alpinehs.com. They seem to have alot of info on different breeds. There are alot of sites out there. Another suggestion would be to join an email list like NubianTalk (see GoatWorld Email Lists). On these lists you can interact with others and ask questions with other Nubian breeders.
All in all, my opinion on "most" goats is that you really need to define what you want out of the goat, i.e. a show goat, a milk goat, a goat for breeding, a goat as a pet, etc. That determines alot of why to breed or not to breed a goat. If the majority of the others are telling you that a goat should not be bred for a specific purpose, they may be right.
